Quesadillas using ONLY ingredients one can find at the local Farmer's market, what a great idea. Shop local! Our town is pretty small, and the farmer's market tends to die down a little around the end of summer, so i had to make due with a Kale, Radish, and Eggplant quesadilla. Topped that off with some freshly made cheese curds. Not the sort of combination i would usually try, but it's worth keeping our local farmers' tables as full as mine!

Our twin boys, Cody and Brody, came home for the first time since going off to college. As a special treat, we wanted to serve them some traditional homemade Italiano cuisine. This recipe sounded incredible and the community really seemed to love it. Unfortunately, the type of tomato was not specified. We now know that Roma tomatoes are best for this type of sauce. We used some beautifully plump heirlooms, but the juice was squirting all through the squeezing process. Might advise skipping out on all the vegetables too. Cody nearly spit up after crunching into a carrot (i guess he hasn’t even sniffed a vegetable in the dorm cafeteria). The bay leaf did give it a certain Jan-a-say-kwa, which delighted the dog (NO, we did NOT feed the dog sauce, just let him smell).

Tikka Masala?? Chef John does it again! What cuisine can't this guy master?! We have a "Chef John" type around these parts, Daryl Sunderland. Daryl thinks he knows his way around a kitchen, but no dish of his has been farther east of Hamburg(er). I unfortunately burned my hand fairly badly while cooking the chicken in the butter. Either there was too much butter or the heat was too high. I ended up cooking the rest of the meal on low heat. It took about 2 hours to cook with prep. Totally worth it though, thanks Chef John!

There's no way to mess this up, but there is a way to make it in just under two minutes, and you could apply this to any egg scramble. The answer to the morning rush was introduced to consumers in 1967. What might that be you ask? Well, my family calls it by a divine name, but you may know it as the counter top microwave. Pre-mixed eggs, ready for scrambling (restaurant style), the grainy style chorizo, and a single ceramic mug are all it takes to whip up this delicious meal in 2 minutes flat. Fully cooked and ready to get you get your stomach churning. I'd recommend a mug with a handle for ease of...well...handling. You can even take it directly to the car for a meal on the go! Trust me when I say that the taste is not compromised, so long as you grease up the mug with a healthy dose of salted Kerrygold pure Irish butter. Imagine the sort of country we could have if the knuckleheads in charge worked with this kind of efficiency!

Let me start by saying I had to TRIPLE this recipe. Now why would anyone need 15 pounds of leg of lamb? Well, every year our town holds a raffle. The lucky winner, yours truly, is given the honor of feeding the entire high school boys' cross country team on the eve of their first practice of the new year. THESE. BOYS. CAN. EAT. But you already knew that. So, why not spoil these heroes of the track with the tastiest richest meat one can slow roast with potatoes AND carrots AND brussel sprouts, because these boys need a hearty helping of veggies to stay spry for the following morning. I assure you, every nook and cranny on these hunks of sacrificial flesh was STUFFED to the brim with practically pulsing hunks of garlic and whole sprigs of rosemary. I don't envy the boy at the end of the pack, because surely this group was sweating out some ripe smells over all those miles.

Our sons, if you can really call them that, well, our twin boys is more like it these days. They came home after their first semester of college and had some news. They turned vegan. Said “these big farms, they are destroying the earth." That's not how we raised these boys, but we try to keep an open mind. They picked this recipe out for us to cook together. It was great getting back into the kitchen again. Cody flicking warm oil on Brody, Brody howling like a coyote when the veggies hit the fryer. The boys really seemed to enjoy these when all was said and done, but I just couldn't see why we couldn't spoon a healthy helping of salted Kerrygold pure Irish butter onto them!!

Any recipe claiming to capture the essence of this most magical time MUST be scrutinized with good intention and a critical eye. With that said, I very much enjoyed the subtle flare of this spice blend and rich texture, ramie7224. The aroma coming from my oven as these baked to golden perfection was nearly identical to that of my own Grandma's marshmallow cinnamon yam autumn dumplings. A treat our home will never forget.
